It is Friday and the weekend is here!!! Are you looking for that easy to bake, yet looking impressive kind of cake? Well then keep reading my friend, I am spilling the beans on my recipe today. This recipe is extremely precious to me cause it was the one my mom would always use and the one she taught me how to make. This is my favourite chocolate cake recipe in the whole wide world. This one is for you my mommy.
I remember as a young girl getting all the ingredients ready and as I got older I received more responsibilities until I was allowed to bake it myself. Until this day, this is the recipe I use. I have not changed it (unfortunately I like to “timmer” on most recipes) and I never will. It is just one of those kind of recipes that you can rely on time after time after time. It will come out perfect every time and it tastes delicious and moist.
Favourite Chocolate Cake Recipe
6 Eggs ( separated into two bowls)
1 cup oil
1 cup boiling hot water
1½ cups of sugar
2 cups of flour
4 teaspoons of baking powder
1 teaspoon of salt
- Beat the egg whites until stiff forming peaks
- Beat the 6 egg yolks, boiling water and oil together
- Add the sugar and mix well
- Add the flour, baking powder, salt and cocoa in together
- Mix well
- Add the egg whites and mix
- lastly add the vanilla
- bake this mixture for 35 mins @ 180 degrees celsius
Like I said, this is such an easy recipe and its fool proof. If you want to spice it up, you can add some cream in between the layers. On the other hand, if you want to tone it down a bit you can add some peach or strawberry jam when decorating this cake. This recipe is also brilliant to use for cupcakes.
I have very fond memories making this cake with my mom and each time I make it now it feels like she is standing right beside me giving me directions.
